1. Pound the lemongrass with the back of a knife to open it. Sear the minced meat with the lemongrass and spices in a frying pan. Cut the Chinese cabbage and chives into strips and mix into the minced meat. Season to taste with soy sauce.
2. Prepare the green beans, grill them on the grill at 200°C for about 6 minutes until they have a light colour and are surface dried. Cut the beans into fine rings with a knife. Peel the shallot, dice and add to the beans. Season with olive oil, the sweet and mild soy sauces.
3. Fill the dough sheets with the minced meat mixture and shape into dumplings or gyoza wraps. Steam for around 12-15 minutes.
4. While waiting, prepare a Grimbergen Blanche and lean back and relax, because it is well-known that anticipation is the greatest joy of all.
350 g minced meat
2 pieces lemongrass
1 pinch coriander
200 g Chinese cabbage
4 tbsp soy sauce
1 bunch chives
20 dough sheets (from Asian shops)
200 g green beans
1 dl olive oil
3 tbsp sweet soy sauce
2 tbsp mild soy sauce
The hearty umami note of the meat dumplings is refreshingly complemented by the delicate lemon aroma of the Grimbergen Blanche.
