Garlic bread with feta cheese and oranges

PREPARATION:
1. Peel the garlic and chop finely. Strip off the rosemary and thyme leaves and chop finely. In a mixer, beat everything together with the soft butter, zest of an orange and the spices until foamy. Season with salt and pepper.
2. Peel the oranges with a knife and cut out the segments. Break the feta into pieces by hand and set aside.
3. Cut the baguette crossways in half diagonally and spread the garlic butter on top. Bake in the oven at 200°C for 6 minutes until crispy. Place the orange segments together with the feta on the hot garlic bread and garnish with garden cress. Cut into pieces and serve on a wooden board.

The best way to enjoy this fresh Mediterranean appetiser is with a chilled Grimbergen Blanche.
